Omelette Arnold Bennett

Step 1:

Poach haddock in milk for 3 minutes. Remove from the pan and flake the fishMENU1


Step 2:

Whisk the eggs with half the haddock


Step 3:

Heat a small omelette or frying pan and add 1/4 of the butter, swirl around the pan. Add 1/4 of the egg mixture and cook very quickly, stirring until the mixture is slightly set. Slide the omelette onto a plate


Step 4:

Mix the remaining haddock with the cheese sauce covering the omelette completely with 1/4 of the sauce and sprinkle with 1/4 of the parmesan cheese, then glaze until golden under a hot grill


Step 5:

Repeat with the remaining mixture to make three more omelettes
